Your screen makes colour by adding light. A press makes colour by subtracting it with ink on paper. These are different physical processes with different reachable ranges, and the range a screen can hit is larger.
So the disappointment is not a mistake anyone made. Certain colours, particularly saturated blues, vivid greens and bright oranges, exist on your monitor and have no CMYK equivalent. When converted, they move to the nearest printable colour, which is duller. The question is never whether the shift happens; it is whether you saw it before or after the job printed.
Conversion is not a fixed formula. It depends on the ICC profile, which describes a specific combination of press, ink and paper. The same RGB value converted for coated stock in Europe and for uncoated stock in Japan produces different results, because those presses genuinely reproduce colour differently.
This is why “convert to CMYK” on its own is an incomplete instruction. Convert to CMYK for what. If your printer has named a profile, use theirs.
The useful move is to convert early and look at the result, rather than converting at output and discovering it afterwards. Once you can see the converted version you have real choices: pick a colour that survives the conversion, adjust the artwork so the dull result still works, or specify a spot colour if the exact shade genuinely matters and the budget allows.
